Well, you might seen it or not. But things that linux can do these days are eye candy beyond windows vista and so much further. And the bonus? Tou don't need the latest and greatest PC witch a huge grafix card.
1. Gnome-look
http://www.gnome-look.org is the first place to look. Wallpapers, metacity themes, emeral themes, icons, xmms skins, log-in themes etc.
2. Compiz Fusion
Follow this guide on ubuntu forums to install it. All you have to do is add a repo and install
3. Avant-windows-navigatorAs the mac look is very popular, the AWN is becoming a common feature on many people's ubuntu desktops.
Follow this guide on ubuntu forums to install it. You need to run compiz/beryl/compiz fusion to be able to run AWN.
4. Screenlets
Are little cute widgets that you can use on your composite desktop (i.e. requires compiz/beryl/compiz fusion). Official website here >>>

5. Conky and gDesklets
If you are not running compiz then there is still conky and gDesklets that don't require much hardware resources.
